Respect for our local heritage is another one of our operating Core Values and is clearly evident in the decor of our restaurants. From our initial designs the goal was to incorporate locally sourced materials and woods like pine, oak and maple. In fact, at the Guelph Borealis tables were crafted from a fallen black walnut tree. The beautiful stone work was mined from nearby Milverton and our metal-work was forged by local artisans.
Borealis Kitchener is a beautifully refurbished early 19th Century historic schoolhouse. We have made every effort to respect and enhance the original architecture of the schoolhouse by keeping and restoring much of the interior design that makes it so special. The original floors have been refinished while tin ceilings and metal work were created by local artisans. Borealis Kitchener is a unique "journey back to see the future” dining experience!
